Finding Balance - Offering More

I appologize for my lack of posts the last few weeks. I have been working hard on finding a balance between family, work, and blogging. I really enjoy sharing recipes, crafts, and frugal ideas through this blog for a number of reasons:

1. It motivates me to be a better person.
2. I am encouraged to try new recipes so I can share them with you.
3. I am more likely to make the time for all the craft ideas I have if I have someone to share my success (or failure) with.
4. I enjoy sharing frugal living ideas. Writing out what I am thinking helps me know how to act on my thoughts.
5. I hope that in sharing these things I can motivate others to reach family and financial goals.

As I have struggled with balancing everything, I discussed it with my sister and we came up with a solution. My sister currently blogs at Saving a Bundle. As a mother of 4, she has also been working on balancing family & blogging time. She wants to give her readers more personal posts & frugal living tips, but she does not have more time to dedicate to the blog. She currently posts hot store deals & coupons. Our solution- starting Monday I will be writing on Saving a Bundle. I am very excited for this opportunity. I will no longer be blogging on The Coupon Basics, but I hope that you will continue to follow my frugal living adventures through Saving a Bundle.

My Shopping Trip

I was finally able to use my rain check at Smith's to get free pasta. I got 30 boxes. 20 of those are for my sisters. I went to Smith's and Winco. Total I spent just under $35.

At Smith's I bought pasta, lettuce, grapes, apples, sour cream(on sale for $0.98) and BBQ Sauce, and bread marked down to $0.99 and spent $10.93.

At Winco I got bannanas, yeast, soy sauce, flax seed, tortillas, milk (4 gallons to last 2 weeks), pasta sauce, and apple juice and spent $23.13.

With menu planning & using items from our pantry we were able to go 2 weeks between shopping trips. Our plan is to continue doing that to save time and money on fuel.

Spaghetti Bake

My Sister in law shared this recipe with me. I think it is delicious, and it adds variety to the menu without a lot of new ingredients. It is also a great way to use some of that free pasta!

Ingredients:
1 Package Cream Cheese
16 oz. Sour Cream ( I used about 1/2 that becase I had an open carton)
12 oz. Cooked Spaghetti
1 lb ground hamburger
Onion (optional)
26.5 oz. Spaghetti Sauce of choice
1/2 c. Grated Cheese

Directions:
Soften cream cheese and mix with sour cream. Spread in bottom of 9x13 dish. Layer Spaghetti on top of cream. Brown hamburger & onion. Add on top of pasta. Pour sauce over the top. Sprinkle with cheese. Bake at 350 degrees for 15-20 min. or until bubbly.

My Walgreens Trip

One of the big adjustments of living in a smaller town is not being able to go to the store every time there is a great deal. Luckily we had plans to be in Pocatello today, so I was able to swing by Walgreens and get a few things.

I did 6 transactions and bought 15 items for a grand total of $6.71. ($2.26 was tax) I was pretty excited. I admitt, I am addicted to getting great deals. The whole way home from Pocatello I kept thinking of scenarios that would allow me to get even more items for pennies. Question for the Readers: Homemade Treats & Self Control

I love making homemade cookies, brownies, and other treats almost as much as I love eating them. I usually try not to have a lot of homemade goodies sitting around to avoid the temptation of eating too many. When I worked out of the home, the solution was to simply leave them at home. That way I was not tempted to munch on sweats throughout the day.

The birth of our son turned this into a real dilema. I now am home 90% of the time, and I have a few extra pounds I would like to loose. As a nursing mother, it seams like I am constantly wanting to snack- and sugary treats are very tempting, but definately not the healthy option. How do you resist the sugary goodness?

Here are a few things I have done to try and keep my snacking healthy:
- I try not to make a ton of treats, but my husband loves the snacks for his lunch, and he could use the extra calories.
- I try to have a few healthy snacks accessable (string cheese, apple slices...)
- Drink plenty of water so that I don't confuse my thirst with hunger.
- I allow myself to have a sugary sweet in the evening. Throughout the day I remind myself to save those calories for later.

I would like to find more healthy, homemade snack options that I could substitute for the more sugary variety. Do any of you have a good healthy, yummy, homemade snack recipe?

Today I am grateful for my cookie scooper. This simple tool allows me to make a batch of evenly sized cookies without extra effort or getting my hands dirty. I am also grateful because today it reminded me to be grateful.

I am grateful for all the little and not so little things that I take for granted. I am grateful for modern technology and the time it saves me as I go about my everyday tasks.

I am grateful for my washer and dryer. I cannot imagine washing all of our cloths by hand. I definitely would not be using cloth diapers.

I am grateful for my bread machine. I can throw all the ingredients in the machine, leave, and come back 2 hours later to hot bread.

I am grateful for my laptop and the internet. With these I am able to remote in to my office computer and work without leaving my house.

Yes, thank you cookie scooper for 3 dozen beautiful chocolate-chip-oatmeal cookies, and reminding me to be grateful for the simple things.

Zaycon Foods is having another chicken event where you can get farm fresh chicken for $1.59/lb! That is a great price, especially for the quality of the product.

Details:
- Sign up or login at the Zaycon Foods Website to see available event locations and place an order.
- Chicken is sold in 40 lb case. The cost is $63.60 per case.
- The chicken is farm fresh and has never been frozen. It needs to be re-packaged and frozen.
(When I ordered mine I cut the breasts into portion sizes and froze them in ziploc bags.)

This is an easy crock pot meal. I originally found the recipe from Money Saving Mom.

Ingredients:
Chicken Breast (appropriate amount for # of people eating)
Italian Dressing (about 1/4 cup per chicken breast)
1/2 cup water

Instructions:
Place ingredients in the crock pot on low for 6 hours. Serve over rice.

Moving- Taking a Break

Good news- Daniel got a new job that he starts the last week of February. We are excited about this opportunity for him to be able to explore a new possible career. We will be moving to a new apartment in a new city which will be a fun adventure.

In order to get everything done that I need to this next week- finding a place to move to, packing, cleaning - I will be taking a break from most of my deal searching and blogging.

Valentine's Day Breakfast

Growing up, the food we ate reflected the holiday. On St. Patricks day, everything was green. Valentines Day- red, white, & pink.

Every Valentines Day we would wake up to pink heart shaped pancakes- what a way to start off your day!

My First Sewing Project- A Nursing Cover

I finally completed my first sewing project on my sewing machine!

I decided to attempt to make myself a nursing cover. It was a very simple project which was just what I needed to practice using my new sewing machine. I followed the free tutorial at mamamonster.blogspot.

I started it the night I went into labor. That put my project on hold, so I finally finished it today. I am proud of my little accomplishment. I spent $2.44 on the yard of fabric & $1.75 on boning. I used D rings from an old belt, so I am not sure what they would cost.

I think I will watch for sales on cute material. A nursing cover would make a useful, innexpensive baby shower gift for some of my expecting friends.

Time Management: Newborn Routine

I am so excited to be a mother, but I definitely underestimated the amount of time caring for a newborn would take! I am beginning to see that a regimented daily schedule will not work right now; however, having a simple routine will help me to be and feel more productive as I adjust to this new phase of life.

As Conner grows and his needs change, my routine will change to accommodate those needs.

A large portion of my day is filled with taking care of our newborn- feeding, changing diapers, and entertaining. Since my day is determined by Conner's eating and sleeping, I cannot plan out an hour by hour routine. Instead, I have created a short list of things that I need to accomplish each day and each week. Each day I will try to accomplish the daily tasks and one task for the week.

Daily:
Take at least 1 nap
(getting enough sleep and staying healthy is at the top of my list!)
Read Scriptures
Prepare Meals
(I will be sticking to easy meals & Daniel will take his turn helping with dinners)
Do dishes
Blog
Work
(I will be doing a little drafting on the side to help out my boss as he finds a replacement for me)
Pick up Apartment

Choose 1 Activity Each Day:
Grocery Shopping
Laundry (2-3 days a week)
Cleaning Apartment (bathroom, kitchen, dust & vacuum)
Work on Craft Project

I plan to do most of my reading and blogging while feeding Conner. Daniel has been great to help out with Conner and projects that I need help with.

I will try this routine and see how it goes. My goal is to stay positive and productive as I transition to being a stay at home mom.

Bowtie Pasta Festival- Our Version

Last fall we went to Johnny Corinos with my parents. We had their Bowtie Pasta Festival and loved it. I looked up the recipe online and found a great copy cat. I then adapted it to what we have on hand.
Ingredients:
1 teaspoon melted butter

1 teaspoon chopped fresh garlic
1/8 cup diced red onion
1/4 cup diced cooked bacon
1/4 cup diced Roma tomatoes
1 cup sliced cooked chicken
1 ounce heavy (whipping) cream
(I used about 1/2 cup extra concentrated milk from powdered milk)
1 jar Alfredo sauce (I use a mix packet)
1/8 cup Asiago cheese
(I use whatever cheese I have. Once I used mexican & once I used chedar)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic salt
10 ounces precooked bowtie noodles
(I used Penne this time. Last time I used Routini)

Saute butter, garlic, onions, bacon, tomatoes, chicken, and spice mixture. When onions begin to turn translucent, add heavy cream and cheese. Once cheese and cream have reduced by half, add Alfredo sauce and bowtie pasta. Toss until well combined and remove from heat. Allow to cool for a few minutes so the cheese and sauce thicken.

Enjoy!

Getting Organized- A Homemaking Binder

This month I have been working on getting more organized. I have written about two of my projects- the crates I made for baby items and re-organizing my coupons. The other project I have been working on is developing a household binder. My goal is to learn to be more productive as I transition to being a new mom and staying at home.

I keep this binder on our side table. If Daniel thinks of something we need to do this week or groceries that we need, he can add it to our list.

My binder is definitely a work in progress. This month I put it together and I have started to use it. It will be fun to fine tune it and add categories that will help me be more productive and more organized. My first goal is to find ways to make my to do list and grocery lists more efficient.

Overnight Sausage & Egg Breakfast Caserol

My brother-in-law made this for us at Thanksgiving, then my mother made it for us at Christmas. Daniel and I both loved it, so I decided to give it a try. It is a pretty simple and delicous breakfast!

Ingredients:
6-8 slices white bread (I made Bread Machine Bread)
about 1/4 C softened butter (just for buttering the bread slices)
4 C grated colby jack cheese
12 oz pork sausage, browned and drained if necessary
(1) 4 oz can green chiles
6 eggs
2 C milk
1 tsp kosher salt
1/2 tsp paprika
1 tsp oregano
1/2 tsp black pepper
1/4 tsp garlic powder
1/4 tsp dry mustard

Instructions:I cut the recipe above in half for Daniel and I, and we still had left overs. Because we were doing a half recipe, I left out the chillies to avoid throwing away half a can.

First cut the crust off the bread and put it in a buttered pan.

Then put down the layer of cheese, then the cooked sausage. In a separate bowl, mix the eggs, milk, and spices. Pour this over the cheese and sausage. Be sure to stir as you pour to keep the spices spread out.

Then cover it and put it in the fridge over night. In the morning, preheat the ovento 350 & bake the caserol for 50-60 min.

Daniel and I do not eat out very often. It is hard to justify the added expense of eating out when we are trying so hard to save money. We occasionally splurge on Subway or a $5 pizza, but we typically stick with our menu plan and eat at home. We make an exception for some special occasions, like our anniversary.

I usually do not post about things I have not tried for myself, but I thought that these looked like useful products that could save some of you a few dollars. I have not tried either of these tax filing systems myself. I am lucky enough to have a father-in-law who is an accountant and takes care of our taxes for us. If any of you have experience with these companies or free systems, let the rest of us know how they work for you!

We Bought our Diapers- Aren't they Cute?!

We bought our cloth diapers, and I think that they are so adorable! We ended up getting 22 diapers for $130, which was a great deal. We have disposable diapers for the first month or so, but I will probably not wait that long to get a few pictures of our little guy in these cute diapers.

Now we just need the baby to decide to make his entrance into the world....

My Quick Painting Project Gone Wrong

You have seen pictures of the shelf where our baby stuff is stored. It was a deep red color, which was fine in our room.

Last week I wanted to move it to the babies room, so I decided to paint it white. We had some white paint from touching up our walls that I could use. Unfortunately, it did not go like I had pictured.

Yup, it turned pink! It looked fine right after I painted it, but when it dried the white paint had soaked in pigment from the red. This would be great if we were having a girl- but would definitely not do for our little boys room. After adding 2 more layers of white, I gave in to my failure and realized that the pink would not be covered up by the white. So, I decided that I would paint it brown instead.

It turned out ok in the end- but took 3 times as long as I had planned!

Organizing Coupons- Trying the Box Method

One of my goals for this year is to find a coupon organization method that works for me. As I transition into life as a stay at home mom, I am looking for ways to simplify and increase productivity. I love using coupons, but my organization method has been lacking.

Binder Method- Not for Me
Last year I bought a binder to use the binder method. I like the binder method for a few reasons. First, everything is in one place. You can organize your coupons, file uncut coupon inserts, store rebate forms, keep store coupon policies, and keep a pair of scissors and a calculator. Natasha at Saving a Bundle uses this method and loves it. You can read here how she set up her binder.

The reason the binder method did not work for me is because I was too cheap to really give it a try. I did not want to spend the money to buy baseball card holder sheets to sort the coupons in. I do not like the idea of trying to squeeze all the different sized coupons into the little slots.

I ended up keeping everything in the accordion part of my binder. I sorted my coupons in envelopes based on the product. It worked, but I decided that there was definitely a better way.

Box Method
This year I decided to try the coupon box organization method. I started with base categories then added more subcategories for items I have a lot of coupons for. I followed Money Saving Mom's post on how her coupon box is organize to get started, then changed and added categories to fit my needs. Having detailed categories has made finding the coupons I want much easier.

This Week- This is for coupons that I am planning to use this week. As I clip and file, I stick them in this folder to be added to my purse envelopes

I used envelopes and index cards that I had on hand to separate my categories. I will continue to add categories as I see fit.

I am currently using a rubbermaid container to store my envelopes. I am working on a homemaking binder (which I will post more about later) where I can store rebate infomation, store policies, and other items that do not fit in my coupon box.

Once a week I spend around 30 minutes cutting and organizing coupons. I add the new coupons from the inserts to my box and remove expired coupons. This keeps my box up to date and reminds of the coupons I have.

When I go to the store, I typically only take two envelopes. One with the coupons I plan on using on the trip, and one with high value coupons for items we use frequently just in case there is a deal on those items. I may miss a deal here or there because I don't have all of my coupons, but this system works best for me right now.

Simplify- Purse Coupon Envelopes

This year I set a goal to try and simplify and be more efficient. There are a lot of areas of my life that I would like to simplify, but I decided to tackle couponing first. I really enjoy finding great deals, and it is easy for me to spend a lot of unnecessary time and effort shopping and searching for great deals.

As part of my simplifying, I have decided to just take 2 coupon envelopes with me on my shopping trips instead of my entire stash. This will help me to focus my trips and spend less time in the store.

Envelope 1: The coupons I plan to use at the stores that week.
Envelope 2: Contains high value coupons for items that we frequently use. This envelope is always in my purse so that I can watch for clearance items and unadvertised sales.

Making Envelopes

I saw this Do It Yourself post on how to make envelopes from calendars, and I decided to try it to see if I could make a sturdier envelope that would last longer in my purse. Instead of calendars, I used pages from free magazines (you can subscribe for free to recieve the American Baby magazine). I used a baby magazine, so my envelopes are currently baby themed. I thought they turned out cute.

First I made square envelopes. Then I realized that my coupons are all folded to fit in rectangular envelopes in my coupon box and would not fit well in the square size.

So I tore apart an old envelope to use as a pattern & traced it to make envelopes that are the same size as the ones I use in my coupon box.

It was a fun little project. I ended up making 4 envelopes, because I liked the paper. So if my two envelopes wear out, I have two more ready to go!

Crock Pot Beef Fajitas

We adapted this recipe from several we found online and were very pleased with the results. We were able to warm up the filling as left overs for several meals.

Beef Fajita Ingredients:
2 lb Beef Roast
2 cups beef broth (mix 2 cups water with 2 teaspoons beef boulion)
1/2 cup diced onion
2 cloves garlice diced
1 diced green or red pepper (I don't like peppers, so these were left out)
2 teaspoons cumin
1 teaspoon cillantro
1/2 teaspoon ground coriander
1/2 teaspoon ground pepper

Put all the ingredients in the crock pot on low for 5-7 hours. Take the roast out and shred it. Return it to pot and mix it with broth mixture.

Serve on warm tortillas with rice, cheese, and lettuce.

Enjoy!

My Freezer Cooking Day

Yesterday I had a mini freezer cooking day. I froze a batch of pumpkin muffins, 1 batch of pumpkin pancakes (Daniel and I decided to try this and see if we like them warmed up before I freeze a bunch), 1 batch of bread machine rolls, and (6) 3/4 cup bags of squash.

I started the day by cooking a squash from my mother. I cut the squash in thirds, removed the seeds, and cooked the squash for 2 1/2 hours.

Then I scooped out the squash and blended it until it was smooth. This is what I used to make the muffins and pancakes. Then I froze the rest to use later.

Having quick snacks and meals in the freezer really helps us to stick to our budget. It gives us quick options for dinner when we don't feel like cooking. The last month I have tried to stock my freezer for the first few weeks after our baby is born. Hopefully this preparation will allow us to eat well and stay within our budget!

Bread Machine Rolls

I have recently become a huge fan of my bread machine. My mom found it for me at a second hand store for $5.00- thanks mom! This is my mom's favorite bread machine bread recipe. I have not tried a bunch of recipes, but I have been very pleased with this one.

Ingredients:
1 cup warm water
1 teaspoon yeast
2 tablespoons white sugar
1/4 cup oil
3 cups flour
1 teaspoon salt

Instructions:
place water, sugar and yeast in the pan of the bread machine. Let the ueast dissolve and foam for 10 minutes. Add the oil, flour, and salt to the yeast.

For Bread: Select basic white bread setting and press start. Makes one 1 1/2 pound loaf.

For Rolls: Select dough setting. When dough is done (mine takes an hour and a half), punch down dough and form into rolls. Let rise to double in size. Bake at 350 for 10-12 min. (until golden brown)

To Freeze: Place un-cooked rolls on small pan in the freezer until firmly frozen. Then place in a freezer bag.
To Cook: Remove desired number of rolls from freezer. Let sit at room temperature for about 1 hour until rolls have risen to twice size. Bake at 350 for 10-12 min.

I have found that using the bread machine saves preparation and clean up time. I put all the ingredients in the pan, press a button, and work on something else while my perfect dough is formed.

Pumpkin Pancakes

Ingredients:
1 1/4 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 pinch clove
1 cup milk
1/3 cup pumpkin
2 tablespoons melted butter
1 egg

Instructions:
Mix dry ingredients. In separate bowl, mix wet ingredients. Add dry and wet ingredients. Cook on sprayed gridle. makes (6) 6 inch pancakes.

I am a huge breakfast fan, and I love these pancakes. Enjoy!

Pumpkin Bread/Muffins

Ingredients:
1/2 cup butter
1 cup sugar
2 eggs
3/4 cup canned pumpkin
1 3/4 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon ground cloves
3/4 cup chocolate chips
3/4 cup chopped peacan (optional)

Instructions:
Cream butter, sugar and eggs. Add pumpkin and mix well. In separate bowl, mix dry ingredients. Gradually add to creamy mixture. When all the dry ingredients are mixed in, add chocolate chips & nuts.

For Large Loaf Bread: Grease One loaf pan. Bake at 350 for 1 hr.
For Mini Loaves bread: Grease 4 mini loaf pans. Bake at 350 for 30-40 min.
For Muffins: Makes 21 muffins. Bake at 350 for about 18 min. Check with toothpick.

These muffins freeze great. Daniel can put a muffin straight from the freezer in his lunch in the morning and it is thawed for lunch. They make a great snack.
