Twice Baked Potatoes

Twice Baked Potatoes
Bake 4 potatoes & let them cool

Cut oval in top of potatoe and spoon out the potatoe (like a canoe) into a bowl

Set skins aside to re-fill later

melt butter in a frying pan. Saute onions in the butter.

Mix butter with 8 oz. sour cream. Mix into potatoes. Add milk to mixture until potatoes are creamy. Then add 1/2 cup cheese

Place creamy potatoe mixture back in potatoe skins and top with cheese. Place on a baking sheet and bake for 25 min or until cheese bubles.
(You can also add pieces of ham to these. I cook them in the butter with the onions.)
